Pizza and Padlizsán

On Friday we hosted our first pizza party of this school year, this one for the entire 9D class and their teachers. We baked 22 pizzas for 29 students and five teachers. This party was held after school, rather than on a Saturday late-afternoon; this allowed for more students to come. A few of the boys live an hour and a half away, so being in the city already made it easier for them to stay. They pretty much entertained themselves playing poker, cards, and a keyboard. But the main purpose is simply hanging out, and we were happy to hear a lot of English being spoken as well.

While this was going on, and while we were waiting for pizzas to get done, Cindy got a lesson from one of Jack's colleagues, Juli, in making padlizsán (egg-plant cream). This was one of those processes that must be seen to be believed. Because who would ever burn egg-plants directly on the burner of the gas stove? But the finished product, eaten with crackers or bagel chips, is oh so yummy! Let us know if you want the recipe.

Never seen eggplant spread done that way. I aways put mine in the oven. Maybe I will try it some time. How high was the gas?
